Marinated Chicken Skewers
A couple of nights ago I marinated chicken with soy sauce, lemon, ginger, garlic, dashi, and mirin. That sat over night and then was skewered with onions, zucchini, red and green peppers. Originally I wanted to cook the skewers on the grill but since it was raining I just broiled them in the oven. Maybe the lemon was a bit strong but it gave it a nice fragrance. I think it could have used a bit of sesame oil and of coarse the smokiness of the grill would have been perfect for flavor.
