Maria's (now Garcia's) in Blythe had carnitas that weren't quite as good as I remember but still might be the best I've had.

So back to the best carnitas, Maria's became Garcia's in Blythe but their carnitas were still darn good - just not quite good as I remember. Very tender, flavorful marinated pork that's been pan fried to a crisp. I also think the last time I tried it, the cut of pork was a little different and so I enjoyed it more.
