Homemade shedded tofu salad with celery, carrots, and sesame oil.

I usually order the shredded tofu salad at a Chinese deli but decided to make it myself this time. Since it's a very simple dish making it right is all about freshness, bouquet, and texture - which translates to crisp vegetables, a hint of sesame oil, and soaking the shredded tofu to get the right softness.
