Ate it rotten

Remembered having a set of tri tip sirloin that's been wet aging for 2 weeks. Minced garlic, salt, crushed pepper - grilled up & served on a bed of spinach sautéed in the steak drippings with a splash of pinot grigio. Slathered the aged meatiness on toasted sweet milk buns. Not half bad for something rotten.
