Had a bunch of avocado poke left from the LB Grand Prix weekend so I combined it with some fresh shrimp I bought at the Crab Cooker and put it all on top hand made corn tortillas (I literally took tortilla dough, rolled it flat and cut out rounds then fried them up - not easy). Made for a nice shrimp taco with a little Cholula sauce and mayo to top it off.
