So my sister suggested I post pictures up of my cooking for her to get ideas in her daily task of feeding 4 growing kids day in, day out. A couple of days ago I made Omu-rice for Miho because she claims to have never had it before. Omu-rice is a Japanese hybrid of omlette (omu) and rice, which basically amounts to ketchup fried rice covered in an egg omlette. Traditionally the rice is fried with ketchup (my grandfather made it this way) but I'm not a big fan of ketchup so I used roasted red pepper soup instead. That is stir-fried with the usual onions, carrots, celery, garlic, and I used shrimp as the meat. Once the fried rice is done I pack that into an empty bowl as a mold and over-turn it onto a plate. For the egg omlette I beat 4-5 eggs and add a bit of dashi, ginger, and mirin, and a bit of water to thin the egg. That is fried as a flat pancake in a bit of olive oil and then
flipped on top of the rice.
