I think my hybrid style okonomiyaki is pretty good - it's very customized to my preferences. 1st a layer of pork belly (today I used bacon), then the batter with green onions & cabbage & carrots, then a layer of yakisoba. I steam it a little to really cook the veggies then do a flip to crisp up the noodles. After plating it, I fry up a egg layer then slather on sauce & mayo & aonori. I also do katsuo & nori but I was out today. #skyguy76ig
