2nd turkey gets a dry brine. The whole point of my usual aromatic brine is to dilute & enhance turkey flavor because other than my sister most my family (& most Japanese) aren't crazy about turkey's gamey taste. But supposedly dry brining preserves & concentrates that taste so we should have 2 turkeys with quite different flavor profiles - we'll see which one wins out. #skyguy76ig
