Yamakurage (山くらげ), a wild plant with a crunchy texture that is disappearing from the local mountains in Kanazawa.

Whenever I return to my Mom's home town of Kanazawa I look forward to all the great seafood but specifically look forward to one item that can't be found anywhere else, Yamakurage (山くらげ)which I believe translates to mountain jellyfish. It's a wild plant that's usually pickled and eaten and has a crunchy texture (similar to jellyfish) that I truly enjoy. But according to my aunt it is disappearing from the wild and becoming a rare delicacy.
