Buffalo vs Beef

Had a buffalo burger at Marc's Burgers in the South Coast Plaza Macy's. I think that was my 1st buffalo experience and I must say I was pleased even though it was somewhat pricey. Buffalo meat is very rich in that meaty or gamey taste. This burger was highly spiced but the flavor came through. Contrast this with Miho's Marc prime beef burger and I noticed that the prime beef had a much smoother texture in the meat, which was a plus for beef. But the beef lacked impact if not for the Star Enise that was used to the flavor the beef - something I had learned from watching chef Heston Blumenthal but never had tasted it yet. The jury is still out on my opinion on the effect but the experience was a welcome one. I think the prime beef had excellent texture but definitly lagged in flavor when compared to the buffalo burger.
